Prawn stirfry - CURRENTLY MY FAVOURITE
1kg green prawns, peeled and marinated in crushed garlic.
Shallots
Broccollini
Red Capsicum (because I hate green capsicum)
Mushrooms
Red Onion
Asparagus
1 cup cooked brown rice
Tamari
Garlic
Chilli
2 eggs beaten
Stir fry all vege's with Tamari, garlic and chilli until cooked. Move the vege's and drop in the brown rice and let it sit on the bottom of the wok for a minute. Add some more Tamari then stir fry and add prawns. Once the prawns are nearly cooked toss through the egg and stir until combined and cooked. It looks like an absolute mess, but it tastes fantastic. The rice takes on a crunchy texture, the egg coats all vege's and prawns and it tastes lovely. This is enough for dinner for 2 plus lunch for hubby.





Sweet potato breakfast
1 large sweet potato
3 slices of bacon fat removed
mushrooms chopped
2 tablespoons of Chobani natural yoghurt
4 eggs and 2 egg whites
Pierce potato with a fork and place in the microwave for 5 minutes (depending on your microwave). Cook mushrooms and bacon in a pan remove and place on paper towell. Place eggs in the pan and scramble. Slice sweet potato in half and mix around the centre with a fork. Divide bacon/mushroom mix in half and place on the sweet potato. Place a dollop of yoghurt on each. EAT - YUM




Nasi Goreng
1/2 cup cooked brown rice
3 shallots chopped
mushrooms chopped
1 egg
Garlic
Tamari
Chilli
Place mushrooms and in pan and sautee with garlic, chilli and tamari. Add shallots and rice until cooked through.Remove from the pan, add the egg and cook until you like it. Add the egg onto the rice. EAT - YUM

Quick Curry Beef
2 packets of Sizzling steak (woolworths)
1 tin of diced natural tomato
A few tablespoons of curry powder (I use more I love it hot)
Garlic seasoning
1 Red onion sliced
Mushrooms whole
1/2 cup brown rice
Add beef cook slightly, when its still red add all other ingredients and leave on the heat until the sauce starts to bubble. Turn off the heat and place the lid on until meat is cooked through. Stir through the  brown rice and top with natural yoghurt. This served 2 for dinner and 2 for lunch).


Breakfast eggs
1 egg 2 eggwhites
Bunch of babyspinach
Tomato's
Mushrooms

Combine eggs but don't over beat, heat a small pan and cook wtih a swirling motion, remove the eggs before they are totally cooked. Add spinach and mushrooms to the pan with a splash of Tamari. Chop baby tomato's and plate up. Delicious and fresh.




Chicken Schnitzel (Clean Eating Style)
Ok so don't want to float my own boat but seriously this was awesome.
1/2kg Chicken Breast (sliced thinly)
1 cup LSA mix (Linseed, Sunflower and Almond)
A few sprinkles of seseame seeds
Paprika and Garlic Powder
2 Eggs beaten

Combine all dry ingredients on a plate, beat eggs. Dip chicken in the egg then coat in the dry mix. Heat a small non stick fry pan with 1 teaspoon of oil and fry off in small batches. The LSA burnt with the first batch so don't have the heat too high. I served this with natural greek yoghurt.


Crab Cakes
2 tins crab well drained
3 egg whites
1/4 or 1/2 cup almond meal
4 shallots finely chopped

 Whip egg whites so its nice and frothy then add all other ingredients. Shape into patties and heat and heat a small non stick pan, add cakes 5 at a time, turning once and cook for a few minutes each side. Remove and top with a sprinkle of seasoning of your choice although I don't think they need it they taste lovely.

Sweet potato fritters 
2 whole sweet potato (grated (I used a kitchen master not by hand !!!)
1/4 cup almond meal
2 eggs
Garlic
Combine all ingredients, if you want to add salt don't do it until they are cook the salt draw's out excess liquid so it can make the mixture runny. The just place handfuls in a hot hot non stick pan.


Sesame Prawns
500g prawns , peeled, devained and heads off
3 eggwhites whipped
Sesame seeds (I used 40g which is a small McCormicks jar) place them on a plate
Spring Onions & minced garlic
Coat prawns in egg white, transfer to plate with seeds.  Heat a non-stick pan with 1 tablespoon of oil, panfry shallots, garlic and prawns until cooked being careful when turning prawns.


Stuffed capsicum

Mini capscium
Tinned natural crushed tomato
1/2 cup brown rice cooked

Cut tops off capsicum and reserve, scoop out seeds and membrane, stuff with rice, add the top back on and place on the tin tomatoe, bake for 1 hour. DELICIOUS and easy as. I have these as a side for dinner or a addition to  my lunch during the day.



Chia seed chips
Chia seeds
Parmesan cheese
Water

Line a baking tray with baking paper, sprinkle about 15cm x 8cm of chia seeds close together on the paper. Spray with a little water to make them stick, sprinkle with a teaspoon of fresh grated parmesan and bake for 7 minutes in a 180deg oven. Let it cool when it comes out and break GENTLY, yummy salty snack when your craving chips.





Zucchini Fritters
1 Zucchini finely grated
1/3 cup Almond Meal
1 Egg white
Paprika
Garlic

Squeeze excess water from fritters, combine all ingredients together and place spoonfulls in a hot hot non stick pan, once seared turn over and once seared again turn heat down to cook. Once cooked remove they are very soft so becareful. Serve with a squeeze of lemon. I will make these on the weekend as a afternoon snack but double or triple the quantity, so easy to make and light.






Chilli garlic prawns
Green prawns (I used 1kg)
Green Beans
Broccoli
Sauce
Red onion
Tin crushed tomatoes
Olives
Garlic
Thyme, Oregano, Basil
Chilli flakes
Mushrooms

Sautee all sauce ingredients in a pan, I  started with the onion and tomoatoe and herbs then added the mushrooms last. Cook the sauce down to get maximm flavour. Marinated the prawns in garlic and pan friend separate then added to the sauce. Boil beans and broccoli together and add at the last minute so they are nice and green and crunchy not over cooked.

 Sweet Potato Chips
2 sweet potato's skin in, sliced finely with a mandalin
Place on baking paper
season with Garlic Powder and chilli powder Heated full heat oven for 20 minutes
remove any smaller pieces earlier so they don't burn


 











Thai beef salad - Clean eating style
Sizzling steak
Garlic
Chilli
Tamari
Baby Spinach & Rocket leaves
Shallots sliced
Capsicum sliced
2 tablespoons cooked brown rice

Slice steak into thin slices, marinate in chilli, garlic and Tamari cook for 2 minutes until tender and let it cool in the cooking juices. Combine all salad ingredients and top with the steak - Dinner is served.


Asparagas and Zuccini Pie
5 Eggs
3 Eggwhites
1/4 cup Skim Milk
1 Zuccini grated and squeezed of water
1 bunch of Asparagas trimmed
Dried Rosemary
Chia Seeds

Line a baking dish with greese proof paper, then place zuccini on the bottom. Combine egg, egg whites and skim milk and beat with a egg whisk. Poor over zuccini. Top with Asparagas and Chia seeds and place in the oven 180 deg for 45 minutes. Allow to cool.





Steak & Mash
Scotch Fillet Steak
1 Cauliflower chopped
Sliced Mushrooms
1 Brown Onion Sliced
Garlic
Olive Oil  

Boil water and add cauliflower, drain, place in a blender with olive oil and garlic blitz until smooth. Cook mushrooms and onion in a pan with garlic, once the onions are cooked and pan is smoking hot add a dash of water to deglase the pan and create a sauce. Take out the mushrooms mix out of the pan, place the steak in the pan on high heat, turning once, remove from the pan and rest on foil then serve.

Mexican Chicken
500g Organic Chicken Mince
1/2 can red kidney beans
1 brown onion finely chopped
1/2 capsicum diced
9 Baby tomatoes halved
Cumin
Minced Garlic
Dried Chilli
(Curry powder optional)

Sautee garlic, chilli, cumin, onion, capsicum, tomatoes to create a sauce. Add mince and stir until cooked. Add Kidney Beans and stir until heated through. (You can add this to hollow Zuccini and bake for 45 minutes.)
I also baked half a sweet potatoe in its jacket for lunch today.
